Zoe's Tips

For the best flavour, use fresh espresso, making sure it has cooled.

Whisk the mascarpone cream gently—overwhipping will make it too stiff to float smoothly over the cocktail.

Prepare the espresso and set aside to cool. To make the vanilla syrup, gently heat 50ml water and 50g sugar until dissolved, then leave to cool.

Add the mascarpone cream ingredients to a mixing bowl and whisk until smooth and softly thickened but still spoonable.

Add ice, vodka, Kahlúa, cooled espresso and vanilla syrup to a cocktail shaker. Shake vigorously for 15–20 seconds.

Strain into two coupe glasses.

Gently spoon the mascarpone cream over each cocktail.

Dust with cocoa powder and garnish each glass with a ladyfinger.

Happy Mixing!
