Preheat the oven to 175°C. Grease and line a 6-inch cake tin with baking paper.
In a mixing bowl, whisk the egg, sugar and vegetable oil until pale and well combined.
Sift the flour, cocoa powder and baking soda into a separate bowl.
In another bowl, whisk together the milk and sour cream until smooth.
Add half the milk mixture to the egg mixture, followed by half the dry ingredients. Repeat with the remaining milk mixture and dry ingredients, mixing between each addition until just combined.
Pour the batter into the prepared tin. Bake for 35–45 minutes, or until a skewer inserted into the centre comes out clean or with a few moist crumbs, but no wet batter.
Allow the cake to cool slightly in the tin, then transfer to a cooling rack to cool completely before icing.
Zoe's Tips
Why is my cake dry?
Too much flour or overbaking can dry it out. Weigh the flour and start checking before the baking time is up.
Why has the centre sunk?
Underbaking or too much raising agent can cause sinking. Check your measurements and make sure the centre is cooked before removing the cake.
Storage
Plain cake: Once completely cool, wrap well or store in an airtight container in a cool place for 2–3 days.
Filled or iced cake: Storage depends on the filling. Cakes with cream cheese icing, whipped cream, custard or curd should be refrigerated at 5°C or colder.
Freezing: Wrap cooled, unfilled layers tightly, then place in a freezer bag or airtight container. Freeze for up to 3 months for best quality.
Defrosting: Thaw wrapped layers overnight in the fridge. Allow the cake to soften slightly before serving for a better texture.
